Every
meal at out Health Retreat and Spa shares in common that it
is both sumptuous and wholesome and yet unique. At the
health
retreat spa
we
reject food
that has been processed in
excess.
Food processing
might
be
necessary in some cases,
but our choice remains fresh organically grown fruits and vegetables,
grains, and seeds.
The
diet shall be discussed and tailored to each individual participant
at our health spa retreat. Some
may need organically
raised chicken or beef, or wild fish, some may enjoy a vegetarian
approach.
Nourishment in the populace of every industrialised
country has undergone a startling transformation since World
War 2. A highly individual
system of growing and marketing food has been transformed
into a gigantic, highly integrated
service
system in which the object is not to nourish or even feed.
Man can never be more than what he eats, and one would expect
that
a phenomenon with such profound effects on health and well
being as a radically changed system of supplying
nourishment would
be documented and assessed by the scientific community. Such
is not the case. Scientific bodies, supported by public funds
and charged with assessing and improving the public’s health,
ignore completely the results of contemporary methods of producing
and marketing food.
The technological world versus the biological
world
Technology
founded on mechanistic laws clashes head on with the processes
of a natural world which adheres to very different
laws. Modern industry, ignoring these biological laws, molds
and manipulates natural processes to suit and to promote its
won mechanistic and economic goals. Mechanization with its
reorganization of living processes in the name of human nourishment
has resulted
in a totally new and contrived biologic ideology in which man
is processed as much as any other element of the defined system.
At
our health retreat and spa we have a genuine desire to provide
wholesome nutrition, since we know the effects of poor nutrition.
Man is an intrinsic part of the organic process of nature,
and no amount of rationality can separate him from those forces.
What
happened to our bread?
Since
Roman times bakers noted that the storing flour for a few
months had two effects: The flour
became whiter, and its
baking qualities improved. We now know that on exposure to
air the natural yellow pigments are oxidized to colourless products
and the protein molecules undergo changes. The pigments such
as carotene, if left in the flour, will be converted to Vitamin
A in the human. The thiol groups in the protein undergo oxidation
and the whole protein lattice becomes more rigid. Additional
oxidative reactions also occur with oil and starch molecules.
At the turn of the century the millers discovered that all
these
effects could be achieved instantly by oxidation with either
nitrogen trichloride or chlorine gas. The technique was simple.
The bleaching gas was blown into the flour as it descended
the final chute into its sacks. Chlorine not only bleaches and
matures
the flour, but it reacts with other molecules in the flour
- in fact may chlorinated lipid compounds
remain, such as dichlorostearic acid. Nitrogen trichloride reacts
with the methionine residues
of the protein to form methionine sulfoximine. Since those
time
we have added ethoxylated mono- and diglycerides to enhance
the softness of the bread, and potassium bromate and potassium
iodate,
with the result that dough rises in no time. Eat the chemical
bread at your own risk. These substances are cumulative and
toxic. Our health retreat spa bread is made by nature’s
laws. Nature’s laws in regard to nutrition and farming
are applied at our health retreat spas. We take care that the
taste and nourishment
remains best during the preparation of the meals.
